Best Side Dishes for Your Fish Dinner

fish-sides.jpg

While the main dish is important in any meal, an entree is only as good as its sides. When you’re eating fish, especially one that you just caught fresh out of the ice earlier in the day, you want to be sure that the sides you make with it will complement its taste. Try one or both of these sides the next time you’re frying or grilling your catch!

Beer-Battered Onion Rings

INGREDIENTS

  • 2 cups all-purpose flour
  • 1 egg, beaten
  • 2 teaspoons dried parsley
  • 2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • salt and pepper to taste
  • 1 cup your favorite beer
  • 3 large onions, sliced into rings
  • 1 cup frying oil

DIRECTIONS

  1. In a shallow bowl combine flour, egg, parsley, garlic powder, oregano, salt and pepper. Gradually add beer, stirring, until a thick batter forms. Add more or less beer depending on the desired consistency of the batter.
  2. In a heavy frying pan heat oil (adjust amount, depending on the size of your pan, so that you have a couple of inches of oil) over medium-high heat. When oil is hot, dip onions in batter and fry, turning once to brown evenly on both sides. Drain on paper towels.

  • 1 cup shredded carrot

DIRECTIONS

  1. In a large bowl, combine cabbage and carrots.
  2. In a smaller bowl, make dressing by combining mayonnaise, vinegar, celery seed, sugar, salt and pepper.
  3. Toss dressing into cabbage mixture and let chill. Serve in a family style bowl.
